1 package of Fresh Sides Red Potatoes, skin on- “ no peeling required”
(wedged, or diced for best results)
*can use recipe for white or yellow potatoes as well
¼ medium sized Vidalia onion, chopped
½ medium sized red pepper, chopped
½ medium sized yellow pepper, chopped
1 garlic clove, minced
1 ½ tbsp. olive oil
½ cup kielbasa, chopped (half inch chopped)
Pinch of salt and pepper
1. Open the re-sealable package, wedge or dice potatoes, add onion, peppers, garlic, olive oil, kielbasa, salt and pepper.
2. Place sealed bag on microwaveable plate and microwave for 8 minutes on high.
3. Using potholders, carefully remove plate from microwave. Let rest for 1 minute. Use the cool touch panels at the top and bottom of bag for safe handling. Carefully open the seal with a fork. Garnish with lemon wedge and serve.
4. Toss and serve.
