1 package of Fresh Sides Yellow Potatoes - “ no peeling required”
(sliced - ¼ inch)
½ lb. Asparagus cut (1”)
3 tablespoons finely chopped Red Pepper
¼ teaspoon salt (or to taste)
¼ teaspoon pepper (or to taste)
1 tablespoon olive oil
Additional 1/2 Cup of olive oil when mashing
1. Open bag and slice potatoes (1/4 inch slices). Put potatoes back in the bag with all other ingredients except the asparagus.
2. Cook potatoes for 5 minutes.
3. Remove bag carefully from the microwave using cool touch panels. Open bag and add asparagus to the potato mixture.
4. Cook for another 3 minutes.
